Camaguey Traditions

The carnival is called “San Juan camagueyano” because it is held around June 24th on Midsummer Day. To mark the broth is done by blocks called ajiaco, with an exquisite and unique flavor that includes Camaguey Traditionsmeats of all kinds, crackers and fried ribs. Another typical dish is matajibaro Camaguey, which is made from ground pork greaves together with half-ripe and ripe plantains and garlic.

Rice with beef and ripe plantain is a food that has stood out in the territory since the nineteenth century. The area is known for making the best Cuban cheeses. Another important tradition is the Procession of the Holy Sepulcher. The procession takes place every Friday and consists of bringing the Holy Sepulcher from the Church of the Merced to the Metropolitan Cathedral, escorted by the archbishop, priests, monks and nuns, seminarians and the people follow, singing religious songs.

Among other features is its contribution to Cuban culture is allowing students to develop in different fields of arts such as dance and an example is the artistic group “Maragua” honored for its artistic performance in many countries. The economic crisis is reflected in their walls that show a lack of paint, and windows in many cases have been destroyed.

Jose Marti Pedagogical University

Founded in 1967, it is one of the largest higher education institutions in the province and is one of the three largest in the country. It has a highly professional faculty, consisting of dozens of doctors and masters in science. It has major research centers of Education, Environment and Environmental Education CEJISOFT, a major television studio and production center software and educational videos.

The center of higher learning ensures teachers for primary, secondary, pre-university, polytechnic and the upper part of the province of Camaguey. The territory also has a Medical University Carlos Finlay, the Higher Institute of Physical Culture and Manuel Fajardo Superior Institute of the Interior Ministry.

Gastronomy

Dishes that represent the popular cuisine are primarily the Creole ajiaco, consisting of root vegetables like cassava, sweet potatoes, green bananas and the pumpkin, with added salt meat, bacon and sweet corn. It is cooked and the broth is left to thicken. Other dishes are matajibaro, white cheese, rice with beef and ripe plantain.

The food in Camaguey and around the country is distributed through a supply book, but this is insufficient and they were forced to turn to alternative sources, like market places, where those products are less expensive. Another option is the black market that many go to.
